About the numbers
Heart rates and lifespans are typical figures for each species, rounded. Real values vary with breed, age, size, and, for fish and shrimp, water temperature. Slaughter ages are typical of conventional industrial production; some animals are killed earlier, some later. Natural lifespans are what these animals can reach in sanctuaries or as companions, with ordinary care.
Beat counts are simple multiplication: rate times time. They are illustrations of scale, not measurements. The rates are adult rates; young hearts beat faster, so the beats the youngest animals lived are, if anything, undercounted.
Two honest caveats
Chickens raised for meat have been bred to grow so fast that many could not reach eight years even if spared. Their bodies tend to give out first. That is its own story, and it is not a smaller one.
Fish and shrimp are the least certain figures here. Their hearts speed up and slow down with the water around them, and far less has been measured. The proportions are still in the right neighborhood. The footage is a stand-in too: the fish shown is a trout, a close cousin of the salmon, and the shrimp is an aquarium species. They were the closest free footage I could find that showed one calm animal.
